THE COFFEE

Some coffees are made for one particular style of brewing. This one adapts.

As espresso, Colombia is smooth, sweet and chocolatey. As filter, it becomes livelier and more fruit-forward. With milk, its caramel sweetness remains clear without becoming heavy.

It is the all-rounder of the FOCCO range.

Behind the beans

Dulima is a washed coffee profile sourced from smallholder lots across central and southern Huila, one of Colombia’s best-known coffee-growing regions.

The higher growing altitude and washed process produce a clean cup with balanced acidity and clear sweetness.

We roast it in small batches in Whitminster to develop enough body for espresso while preserving the clarity needed for filter brewing.

How to brew it

For espresso, start with an approximate 1:2 ratio and adjust the grind until the cup tastes sweet and balanced.

For V60 or filter, use a medium grind and a ratio between 1:15 and 1:17. Expect more red fruit and brightness as the coffee cools.

Use 18 g of coffee and aim for 36 g of espresso in 25–32 seconds. If it runs faster, grind finer; if it runs slower, grind coarser. The result should taste sweet, balanced and full-bodied.

Filter V60

Filter (V60)

Use 15 g coffee to 250 g water at around 93°C. Taste again as the cup cools.

Use 30 g coffee to 500 g water and steep for four minutes for a full, comforting cup.
