THE STORY

PULSO is about rhythm.

The repeated movement of weighing, grinding and brewing. The first cup of the morning, the pause between jobs and the familiar routine that helps the day move forward.

This coffee was selected to become part of that rhythm: sweet, dependable and uncomplicated to brew.

Behind the beans

Sourced from Fazenda Aragão in Patos de Minas, Cerrado Mineiro, through the Café Delas programme. The coffee is produced by Andrea Ribeiro Silva, and the programme supports and promotes coffees produced by women.

The natural process helps build caramel sweetness, body and a rounded milk-chocolate and hazelnut character. We roast it in small batches in Whitminster to keep that profile smooth, balanced and easy to extract.

How to brew it

PULSO is particularly well suited to espresso and milk-based drinks.

Expect a syrupy, milk-chocolate espresso with a creamy body. In a flat white or latte, it becomes sweet and hazelnut-praline-like. It also works beautifully in a moka pot, AeroPress or cafetière.

Espresso

Use 18 g of coffee and aim for 36 g of espresso in 25–32 seconds. If it runs faster, grind finer; if it runs slower, grind coarser. The result should taste sweet, balanced and full-bodied.

Filter (V60)

Use 15 g coffee to 250 g water at around 93°C. Taste again as the cup cools.

Use 30 g coffee to 500 g water and steep for four minutes for a full, comforting cup.
